Foody Friday - Loaded Mush

A couple weeks ago DR took a quick trip home to Indiana to deliver an irrigation motor to his brother for one of our fields that ironically was dry as a bone last year before we could get irrigation on it but flooded this year as the crew was trying to put in the irrigation rig!

Anyway, while DR was in Indiana he took a day to meet some friends and family at the Indiana State Fair. Of course he kept me up to date on all the great fair food I was missing! Rib eye Sandwiches!! Indiana State Fair Rib eye Sandwiches and Swiss Cheese Grilled Cheese on Rye were about the only thing I ate when I was in Indianapolis in August growing up! YUM! 

Once, while bragging, DR texts me the following message; 

"We need to try laoded plenta. Your dad likes it."  

I responded, "Plenta? Perhaps a misspelling?"

"Yes. Its like mush with bacon and other stuff in it." Of course my dad likes it, he grew up eating mush!

"Polenta. I've made that, you've just never eaten it. (He's notorious for not eating new things that I make. But of course he'll eat it anywhere else!!) Bacon. Onions. Cheese. Sounds good!" 

After he got home we experimented a couple times and came up with a recipe that we both really liked! 


First dice up your veggies, I chose mushrooms and peppers but really anything will work. 


Fry up a pound of ground sausage or a pound of bacon. When you are finished transfer your meat to a plate but DON'T drain the grease from your pan!!! 

 

Next you need to saute your vegetables in that wonderful grease, maybe add a bit of butter or olive oil if your meat was a bit lean. 


While your sausage/veggies are cooking you can put your broth in a saucepan. I didn't have any broth on hand so I dissolved some bouillon cubes in water...worked alright! 


When your broth is ready and getting nice and warm melt your butter in the broth.
FYI - I use REAL butter for everything. Not margarine, nothing fake, nothing with weird chemicals on the labels. REAL BUTTER y'all isn't gonna kill ya! If you can't pronounce what's in it then you don't need to be a eatin' it! 

Oh, yeah..add a bit of salt and pepper here...whatever looks good. 

It's kind of hard to take a photo of this next part by myself but when your butter/broth is boiling a bit turn down the heat to medium low and SLOWLY start adding in the cornmeal and Parmesan cheese whisking it smooth until you've got it all incorporated and stir until it's thick. 


Nice and smooth...ish. A few clumps but don't worry, they'll all even out in the end. 


Then we add in all the sauteed veggies and sausage and mix it thoroughly into the cornmeal. 


Finally pour it into a couple of bread pans and allow to cool. When they are cool you can remove them from the pans and wrap in aluminum foil. I put one loaf straight into the freezer and the other loaf in the fridge. For breakfast I slice up a couple of pieces and fry them in butter on medium high along side an egg in the morning. Mmm, mmm, good! 

Loaded Mush

1 pound ground sausage or bacon
2 green peppers, diced
mushrooms, diced 
2 1/2 quarts of chicken broth
1/2 cup real butter (not margarine)
salt and pepper to taste
3 cups cornmeal
1/2 cup Parmesan cheese


Brown sausage or bacon. Set aside but reserve grease in pan. Saute veggies in meat grease. Heat broth to boiling. Melt butter in broth. Add salt and pepper to taste. Slowly whisk cornmeal and cheese into broth/butter mixture. Cook on low until thick. Stir in meat and veggies. Pour into greased bread pans and allow to cool. Slice and fry and eat and enjoy!

Morels!!

You'll never believe what DR found over the weekend. 
He was pulling up a dense patch of  bean plants that I didn't like when he told me to bring the camera. 


Morels!

Well, they looked like morels but they didn't quite have the right density or texture as a morel and they had a weird covering to them but still, a pretty darn big mushroom! And in Kansas in the middle of a drought! 



They were probably 4 inches long....should have brought out the ruler. 
We didn't eat em' but were still shocked they were there.
Guess their existence goes to prove we've been pouring on PLENTY of water to our garden this droughty summer!

Foody Friday -Hamburger Mushroom Steak

I found a new cooking magazine I just love Taste of Home; Simple and Delicious.
Full of quick and easy recipes that aren't just the same old boring foods.

This Hamburger steak was SO much better than I thought it would be.
I only made it because DR asked me to.

The night I made this our routine got really out of whack and I was running around like a chicken with it's head cut off. While making dinner I was thinking about 10 other things and actually forgot to put in a bunch of ingredients (I'll tell you which ones) and it still came out really good.


Hamburger Steak with Mushroom Gravy

For steaks;
1 egg (forgot)
1/2 c. dried bread crumbs (forgot!)
1 envelope onion soup mix, divided in two (this is the key yumminess ingredient)
dash pepper
1 lb. ground beef
3 T. flour
1 3/4 c. cold water
1 t. Worcestershire sauce (I used soy sauce)
1 jar of whole mushrooms drained. (fresh sliced is what I used)

In large bowl, combine egg, bread crumbs, 2 T soup mix and pepper. Crumble beef over mixture and combine. Shape into four patties.

In a large skillet, cook patties over med. heat for 4-5 minutes on each side till juices run clear. Set aside and keep warm.

Combine flour, water, Worcestershire sauce and remaining soup mix until blended; stir into skillet. Add mushrooms. (I also melted some butter in skillet before adding ingredients and used milk in place of some of the water.) Bring to a boil; cook and stir for 5 minutes or til thickened. Serve with patties and mashed potatoes (or rice like I did).

Foody Friday - Hot and Cold,Mushroom, Squash, Avocado, Cilantro Salad

You are probably thinking,
"With a title like that, this post has to be an April Fool's Joke!"

No joke. But it is a dish I came up with all by myself...and I'm pretty proud of it. Especially since it contains squash!!!

Hot and Cold Mushroom, Squash, Avocado, Cilantro Salad



Melt some butter in a skillet. None of that fake margarine stuff, use the real thing!! Butter is natural...remember that so it HAS to be good for you right? The less you like vegetables then the more butter you should be a throwin' in the skillet! A couple tablespoons should do it.

Slice up a yellow summer squash and a few fresh mushrooms and throw em' in on top of all that yummy butter.


Leave the veggies and dice up half an avocado and put it in a bowl.



About this time check on those veggies and toss in some salt and pepper and give em' a good stir.



Wait a few more minutes and a few more stirs until the squash are getting nicely browned. About this time your mushrooms will taste more like hot butter than like mushrooms!


Pour those hot veggies right on top of your avocado and give em a quick stir.
Squeeze the juice of half a lime on top.

Top with a generous handful of fresh cilantro. Add more salt, pepper
 or lime juice to taste.

I don't know about you but this dish just oozes summertime. Clean and fresh and light. Maybe I'll even put a squash plant in my garden this summer just for this dish.

Now, does anyone have a better title for my new salad?

Foody Friday - Mashed Potato Stuffed Mushrooms

Let me start off by apologizing for today's photo. These stuffed mushrooms were so good I scarfed them up before I remembered I had wanted to take a picture of them when they came out of the oven.

So I only have a photo of them before they went in the oven. They still look pretty good though I think.


Mashed Potato Stuffed Mushrooms

Clean mushrooms and remove stems. In a skillet saute a couple tablespoons of olive oil and a couple teaspoons of garlic. After a few minutes add shredded spinach until it is slightly wilted. Add spinach mixture to a cup or so of leftover mashed potatoes. Add some shredded cheese (mozzarella is fabulous) and mix well. Scoop mashed potatoes into mushrooms and sprinkle with a little salt and paprika. Place on lightly greased pie plate, or whatever ovenware works for you and bake at 350 for 12-15 minutes until golden.
