Foody Friday - Loaded Mush

A couple weeks ago DR took a quick trip home to Indiana to deliver an irrigation motor to his brother for one of our fields that ironically was dry as a bone last year before we could get irrigation on it but flooded this year as the crew was trying to put in the irrigation rig!

Anyway, while DR was in Indiana he took a day to meet some friends and family at the Indiana State Fair. Of course he kept me up to date on all the great fair food I was missing! Rib eye Sandwiches!! Indiana State Fair Rib eye Sandwiches and Swiss Cheese Grilled Cheese on Rye were about the only thing I ate when I was in Indianapolis in August growing up! YUM! 

Once, while bragging, DR texts me the following message; 

"We need to try laoded plenta. Your dad likes it."  

I responded, "Plenta? Perhaps a misspelling?"

"Yes. Its like mush with bacon and other stuff in it." Of course my dad likes it, he grew up eating mush!

"Polenta. I've made that, you've just never eaten it. (He's notorious for not eating new things that I make. But of course he'll eat it anywhere else!!) Bacon. Onions. Cheese. Sounds good!" 

After he got home we experimented a couple times and came up with a recipe that we both really liked! 


First dice up your veggies, I chose mushrooms and peppers but really anything will work. 


Fry up a pound of ground sausage or a pound of bacon. When you are finished transfer your meat to a plate but DON'T drain the grease from your pan!!! 

 

Next you need to saute your vegetables in that wonderful grease, maybe add a bit of butter or olive oil if your meat was a bit lean. 


While your sausage/veggies are cooking you can put your broth in a saucepan. I didn't have any broth on hand so I dissolved some bouillon cubes in water...worked alright! 


When your broth is ready and getting nice and warm melt your butter in the broth.
FYI - I use REAL butter for everything. Not margarine, nothing fake, nothing with weird chemicals on the labels. REAL BUTTER y'all isn't gonna kill ya! If you can't pronounce what's in it then you don't need to be a eatin' it! 

Oh, yeah..add a bit of salt and pepper here...whatever looks good. 

It's kind of hard to take a photo of this next part by myself but when your butter/broth is boiling a bit turn down the heat to medium low and SLOWLY start adding in the cornmeal and Parmesan cheese whisking it smooth until you've got it all incorporated and stir until it's thick. 


Nice and smooth...ish. A few clumps but don't worry, they'll all even out in the end. 


Then we add in all the sauteed veggies and sausage and mix it thoroughly into the cornmeal. 


Finally pour it into a couple of bread pans and allow to cool. When they are cool you can remove them from the pans and wrap in aluminum foil. I put one loaf straight into the freezer and the other loaf in the fridge. For breakfast I slice up a couple of pieces and fry them in butter on medium high along side an egg in the morning. Mmm, mmm, good! 

Loaded Mush

1 pound ground sausage or bacon
2 green peppers, diced
mushrooms, diced 
2 1/2 quarts of chicken broth
1/2 cup real butter (not margarine)
salt and pepper to taste
3 cups cornmeal
1/2 cup Parmesan cheese


Brown sausage or bacon. Set aside but reserve grease in pan. Saute veggies in meat grease. Heat broth to boiling. Melt butter in broth. Add salt and pepper to taste. Slowly whisk cornmeal and cheese into broth/butter mixture. Cook on low until thick. Stir in meat and veggies. Pour into greased bread pans and allow to cool. Slice and fry and eat and enjoy!

Foody Friday - Cheesy Crackers just like Goldfish!


Last week I met with my ladies group and we were having a lesson on cheese and a cheese tasting. There was goat cheese, brie, hivarti, muenster...so many to try! One of the ladies made these wonderful cheese sticks that I thought tasted just like Goldfish crackers! 


Cheesy Crackers

2 cups shredded sharp cheddar cheese
1/2 stick of butter
3/4 cup of flour 
dash or two of chili powder
1/2 teaspoon minced garlic 

Process all ingredients in a food processor until worked into a ball of dough. Roll out the dough onto a lightly floured tea towel or other cotton cloth and cut into squares, about 1" or so. (Next time I'm going to use alphabet cookie cutters!) Place on lightly greased cookie sheet and bake for 10 minutes in 350 degree oven.  

Not all of my kids were convinced however that they were wonderful; one of them just had to veto it. Ah, two out of three isn't bad.

Foody Friday - Broiled Zucchini and Tomato Bites

Look! Another zucchini and tomato dish!! 

I bet you are looking forward to when my garden stops producing aren't you? HA, me too! 


This is so simple and addictive! I've been eating a lot of these lately. 

First slice up your zucchini and small tomatoes and layer them on a greased baking dish or cookie sheet. Top off the tomato with a dollop of ricotta cheese and seasonings. I like sprinkling some pepper and basil on top but experiment and tell me what else works well on top. 


Place the bites under a high broiler until cheese is beginning to brown which should take 10-15 minutes. 


I eat it right off the pan. Yum!

Foody Friday - Zucchini Pizza

Zucchini and Okra is taking over my summer/fall diet. But, on the positive side, it's forcing me to be more creative in the kitchen. And it's forcing me to finally learn how to spell the word zuchinni....zuchhini....zucchinni...

ZUCCHINI! There we go! 

Zucchini Pizza



Make up your favorite pizza dough recipe. I used 1/4 of Pioneer Woman's Pizza Crust Recipe.  Then I set it aside to rise. 

Slice up one medium zucchini. Zucchini have their best flavor when they are small, don't let them grow huge before you pick them. Pick them when the vegetable is about 2-3" in diameter. If you can't wrap your wrap your middle finger and thumb around it and touch (or almost touch) it's way too big. 

Saute the zucchini in butter or olive oil for a few minutes until just beginning to brown. Set aside. 

Prepare pizza dough. Cover dough lightly with Parmesan cheese. Layer zucchini on top. Sprinkle zucchini with dried basil. Place shredded Mozzarella cheese on top of zucchini. Place in 500 degree oven for 8-10 minutes or until cheese is brown and bubbly. 


This pizza was great! Even though I cooked it a bit long :)
Don't make more than you can eat though because although it was wonderful, warmed up days later it wasn't quite as good. 

ZUCCHINI!! I done learnt how to spell it!

Foody Friday - Zucchini Ribbon Lasagna

Despite a drought and my garden being dry and thirsty most days, I've still had an overabundance of zucchini. We only have three plants and I still have zucchini coming out of my ears! What to do with it all? 

DR found this recipe for me the other day, actually submitted to the paper by a family friend of his back in Indiana. Small world. 


Zucchini Ribbon Lasagna.
I thought it was great! My kids didn't agree with me. 


This is what my kids thought of it. 


As long as you aren't feeding kids it is a great recipe! 

For sauce
1 can of tomatoes with juice (I also added a small can of tomato sauce)
2 T olive oil
1 small onion, diced
1/4 t red pepper flakes
 12 oz. ground meat (I used sausage but use whatever floats your boat)
1 T dried oregano
2 T salt

For Lasagna
2 medium zucchini, trimmed and sliced lengthwise
1 cup Ricotta cheese
1/4 t. olive oil

Make sauce
Pulse tomatoes in blender til finely chopped. Heat oil in skillet over med. heat. Cook onion and red pepper flakes, stir occasionally, til onion is tender. Add ground meat and cook til browned. Add tomatoes and sauce (if using) and bring to a boil. Simmer til thick, about 20 minutes. Stir in oregano and salt. Let cool.

Make Lasagna
Preheat oven to 375. Slice zucch's lengthwise. Place 5-6 zucchini slices in bottom of 8 inch square pan. Top with sauce, dot with 1/4 c. ricotta cheese. Repeat twice with zucchini, sauce and ricotta until you run out of ingredients. Bake uncovered til lasagna bubbles and top browns. Bake at 375 for 50-60 minutes. Let stand for 10 minutes before serving. 


As long as you aren't a veggie hater or Calvinesque little kid you will enjoy this lasagna!

Foody Friday - Stuffed Baked Tomatoes

I found this recipe in last Sunday's newspaper and thought it an appropriate summer dish. I just wish I had tomatoes in my garden to use. Ah well, the grocery store is only a block away.


Stuffed Baked Tomatoes

2 tomatoes
6 T ricotta cheese
1/4 cup chopped fresh spinach
1 garlic clove, minced
1/4 t. dried thyme
2 T Parmesan cheese

Preheat oven to 400 F. Cut tomatoes in half crosswise. Combine ricotta cheese, chopped fresh spinach, garlic and thyme. Top each tomato half with about 2 T of ricotta mixture. Sprinkle Parmesan cheese on top. Bake 10-15 minutes. Serves 4...or just me...I ate them all...yum!

Stuffed Pork Steak - Foody Friday


Guess what! Today's recipe is NOT BREAD! I bet that's all you thought my family ever ate didn't you?? However the men in this house are quite the carnivores so I'm familiar with meat, just not very confident with it.....yet.

But here is one I love!! Stuffed Pork Steak! It goes great with Spaetzle. (This recipe works great with chicken breasts too. )
First get you meat and pound it out nice and thin.
Plus, you can count swinging a big old meat hammer as your upper arm workout for the day. Multi-tasking people!!

Liberally season your steaks. I like to use lemon pepper but seasoned salt or salt and pepper would be good too. Experiment!! Then lay a row of cheese in the middle. I used Munster cheese but take your pick. Mozzarella would be great too.

Add some spinach on top. I used frozen spinach just because I didn't have fresh on hand.
Roll up your meat and stick a toothpick in it to hold it together.
Heat a couple tablespoons of olive oil in a hot skillet and brown all sides, a minute or two each side.
Remove and sprinkle liberally with Parmesan cheese. Put into an oven heated to 375 for about 30 minutes or so.
Wallah!! Yum, yum!
