Foody Friday - Corn Oysters

One of my favorite all time recipes Mom made a lot when we were kids.


Corn Oysters

1 c. of vegetable oil
1 c. flour
1 t. baking powder
1 t. salt
2 eggs
1 can whole corn, reserve liquid

Heat oil in skillet. Mix flour, baking powder, salt, eggs and enough corn liquid to form batter. Stir in corn. Drop by spoonfuls into hot oil. Fry until bronly on both sides, 4-5 minutes each. Drain on paper towels and serve warm.

Of course I always liked them cold the next day too. DR likes them drenched in barbeque sauce. If you fix these I'd like to know how you eat them or what you eat them with.
