Foody Friday - Corn Oysters

One of my favorite all time recipes Mom made a lot when we were kids.

Corn Oysters

1 c. of vegetable oil
1 c. flour
1 t. baking powder
1 t. salt
2 eggs
1 can whole corn, reserve liquid

Heat oil in skillet. Mix flour, baking powder, salt, eggs and enough corn liquid to form batter. Stir in corn. Drop by spoonfuls into hot oil. Fry until bronly on both sides, 4-5 minutes each. Drain on paper towels and serve warm.

Of course I always liked them cold the next day too. DR likes them drenched in barbeque sauce. If you fix these I'd like to know how you eat them or what you eat them with.

  1. Just the other day I was thinking they sounded good. Thank you for sharing this.

  2. I have never had these but they look oh so yummy and something we definitely need to try at our house. On Monday I'll be hosting Hunk of Meat Monday so feel free to have a post to link up if you are interested! Enjoy your weekend...on the prairie!

I'd love to hear what you have to say! I try to reply to every one of them.
