Foody Friday - ???Meatloaf???

Who doesn't like meatloaf? Meatloaf is satisfying, provides leftovers (usually) and can be made without a recipe....usually. You mix up 3 or 4 loaves and freeze em too!

I don't bother to measure any of my ingredients when I make meatloaf; ground beef, a few eggs, salt and pepper, ketchup and oatmeal mixed together till it looks good. It always turns out fairly well so I normally don't stray from these ingredients. But I know there are better meatloaves in the world than mine.

Of course I have been known to experiment with my meatloaf too. Once I substituted leftover rice for the oatmeal .... not bad. Then I followed this recipe that soaked bread in milk and wrapped the whole loaf in bacon. I thought it was great but the men in my house rebelled and grumbled and requested I return to my original "recipe".

Today's post isn't a recipe I have to share with you but a question? How do you make meatloaf? Do you follow a strict recipe or just throw stuff together? What makes your meatloaf great? or terrible?? I'm looking to spice up my meatloaf and want some new ideas!

  1. One can of ravioli Heather! Add it to the other ingredients! It makes meatloaf wonderful! Try it!

  2. I follow the same basic principle, but I add applesauce- and when I can sneak it in-- shredded zucchini. You know the man in my house grumbles about that, but they help hold it together and keep it moist-- then you can use a lower fat meat (maybe even some turkey)! Luv, Mindy

  3. The secret of mine is using half turkey and half beef, but don't tell our baby brother cause he loved it. I also use barbeque sauce instead of ketchup.

  5. I follow a recipe, and it must be a good one because even my meatloaf-hating college roomie liked it! It used chopped onions along with the ingredients you listed, and it had a topping made of ketchup, yellow mustard, and brown sugar. Mmm...now I want to make one this weekend.

  6. I love meatloaf and it is a great way to get veggies in that my 4 year old does not notice. I always add tomato sauce over it and it is delicious! I am a new follower. Have a great day!

  7. my meatloaf is always either pink or over cooked, and never good. Can't get the hang of thoroughly cooking the meatloaf without over cooking it!

  8. Gosh! I haven't made meatloaf in a VERY long time! I do go the ketchup/mustard route on top WITH about three slices of bacon. Mom puts cracker crumbs in hers. Mushrooms too! Hmmmm.... I think I have all that stuff here in the house somewhere! ;-)

  9. I mix ground pork and ground chuck, bread soaked in milk, mustard, BBQ sauce, 2 eggs, pepper. In the last 15 minutes I glaze with catsup and brown sugar mixture. I make triple batches, because it makes great meatballs. Or just brown the mixture and put it on your favorite pasta and omit the glaze.
